Ashley just finished working out and planned to make homemade Lasagna for dinner.

Ashley made plans on Saturday to make her homemade lasagna for dinner with her famous garlic bread and salad. 

Here is is laying down the pre-cooked noodles then she layered the cheese mixture.

Then after the cheese mixture she put a layer of the pre-cooked hamburger and pork on top and then started over with the layers.  She states "I love homemade lasagna".




Ashley's Lasagna
1/2 pkg lasagna noodles
1/4 Lb ground pork
1/4 Lb ground beef
1/2 (80z)  can tomatoe sauce
1/2(280z) crushed tomatoes
1-1/2 tsp. chopped fresh parsley
1/2 clove garlic, crushed
1/4 tsp. diced oregano
1/4 c. minced onion
1/8 tsp sugar
3/4 tsp dried basil
3/4 tsp salt
1/2 Lb small curd cottage cheese
2 eggs
1/4 c. and 2 Tbl  Parmesan cheese
1 tsp salt
1/8 tsp. black pepper
1/2 Lb shredded mozzarella cheese.


Directions:
Preheat oven to 375 degrees.  Bring large pot of salted water to a boil.  Add noodles.  cool 8-10 min. drain and set aside.  Place Pork and Beef in Large skillet.  Cook over med-high heat until brown.  Stir in tomato sauce, crushed tomatoes, parsley, garlic, oregano, onion, sugar basil and salt.  Simmer over mid-high heat for 30 min.  Stir occasionally.  In a large bowl, combine cottage cheese, eggs, Parmesan cheese, parsley, salt and pepper.  In a 9x13inch baking dish, place sauce on the bottom of dish or olive oil so noodles wont stick.  Place 2 layers of noodles on the bottom of the dish, layer 1/2 of cheese mixture, 1/2 of mozzarella cheese and 1/2 sauce and meat.  Repeat layers. End with sauce and meat mixture on top and sprinkle Parmesan cheese on top.  Cover with foil and bake for 30-40 min.  Remove foil and bake another 5-10 min, let stand for 10 min before serving.  Serve with salad and garlic bread-yummy!!!

Continuation of the saga from Chiquitas chocolate extravaganza....

So today Monday 2-4-2012 I took Chiquita back to the vet for another follow-up check of blood work and urine tests.  I was fearful that her blood sugars would not come down.  But instead got terrific news that her lab work was good after waiting a week.

The ALT and ALP are liver enzymes, this just shows her liver is working really hard to get rid of the toxcins.  POOR BABY.
So as you can see my little dog is doing quite well, she could have been very sick or even dead after ingestion of the chocolate  covered raisins.  I am so thankful she is not diabetic-Yeah!!!!!
